Whether you are protesting to “save the bees” from dangerous climates and pesticides, or you just prefer a drizzle of sweet honey on your morning toast, bees and their honey are one of nature’s sweetest and most fascinating creatures. Respectively, even more active than the ant, a honeybee sets out to hunt, pollinate, and take care of the hive until night. Their sticky journey continues its entire lifespan. And as far as it is known, the bee receives no salary for its willingness to do continuous labor to produce a product with so many uses. Thank goodness bees haven’t gone on strike. Natural honey has been used for thousands of years to heal burns, aid sleep, help boost immune systems, and more. Most importantly, it is just so darn delicious. No wonder they call it liquid gold.
- 3-4 bags (10.5 oz) of natural plain popcorn, popped
- ¾ cup roasted peanuts, lightly salted
- ¼ cup honeycomb – optional
- 2 cups sugar
- ½ cup butter
- ½ cup heavy cream
- ½ cup honey
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- Place the popcorn, peanuts, and honeycomb in an extra-large bowl and set aside.
- In a medium-large pot or saucepan, combine butter, sugar, cream, and honey. On medium heat bring mixture to a boil, stirring occasionally.
- Clip on a candy thermometer and slightly reduce heat to medium-low. Keep the mixture at a low boil until the mixture reaches the soft ball stage, or when the candy thermometer reaches 235-240 degrees. (To test, drop asmall amount of syrup into cold water. The syrup should form a soft, flexible ball, but flattens like a pancake after a few moments in your hand.)
- Take the pot off the heat and quickly stir in vanilla and baking soda. Pour the mixture over the popcorn, peanuts, and honey comb, and stir well. Enjoy!
- Buy natural honey at your local farmer’s market or health food grocery stores.
- Recipe yields around 6-8 servings. If making for a party or large number of people, I recommend doubling up.
- Store in an airtight container up to a week.
