Food Friday – Thanksgiving Leftovers

The Thanksgiving Day hustle is over and perhaps you now have a fridge full of leftovers. So, we have gathered a few recipes for you to help with using up those delicious leftovers!

Potato Pancakes II

Wanting to use up some of those mashed potatoes for breakfast? This cheesy, crispy, golden pancake looks pretty good! I bet you could even add some gravy on top and it’d still taste great. Original recipe found here.
  1. In a medium bowl, mix together potatoes, beaten egg, salt, and cheese.
  2. Melt butter on a large griddle at medium heat.
  3. Drop potato mixture onto griddle 1/4 cup at a time. Flatten with a spatula to 1/2 inch thick.
  4. Fry approximately 5 minutes on each side, until golden brown.
  5. Serve hot.

Baked Potato Soup I

Use up those leftover potatoes with this thick, hot, and filling potato soup, don’t forget to dip in those extra rolls! Original Recipe found here, recipe below is adjusted to 3 servings.

  1. Place bacon in a large, deep skillet. Cook over medium heat until browned. Drain, crumble, and set aside.
  2. In a stock pot or Dutch oven, melt the margarine over medium heat. Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently.
  3. Reduce heat, and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt, and pepper. Continue cooking, stirring frequently, until cheese is melted.

Turkey Tetrazzini II

Easy recipe with just a few ingredients! Original recipe found here, below recipe adjusted to 4 servings.

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
  2. Bring a large pot of lightly salted water to a boil. Add spaghetti, and cook for 8 to 10 minutes or until al dente. Drain, and place in the prepared baking dish.
  3. Melt butter in a medium saucepan over medium heat. Stir in flour. Mix in chicken broth and milk. Cook and stir until the mixture comes to a boil. Stir in about 1 1/3 cups Parmesan cheese, and remove from heat.
  4. Mix chicken broth mixture and turkey with spaghetti. Top with remaining cheese. Bake 1 hour in the preheated oven, until the surface is lightly browned.

Apple Crisp with Cranberry Sauce

Leftover Cranberry Sauce? This simple recipe just takes 15 minutes to prep and you probably already have the ingredients on hand! Original recipe found here.

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Place apple slices in an 8 or 9 inch square baking dish. Spread the cranberry sauce over the apples. In a medium bowl, stir together the flour, oats, brown sugar, cinnamon, and butter until crumbly. Sprinkle over the apples and cranberry sauce, covering completely.
  3. Bake for 45 minutes in the preheated oven, or until apples can be easily pierced with a knife and topping is browned.
